Enchilada Casserole

To be honest this was a total throw together dinner that came out too good not to share.  I had planned on following a recipe I found on Pinterest, but when it was time to make dinner I decided to wing it!

Gluten Free Enchilada Casserole

Enchilada Casserole

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients

  • 1 tbsp oil
  • 1/2 onion, chopped
  • 1 lb ground beef
  • 1 packet of GF taco seasoning
  • 3/4 cup of water
  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 can tomato and green chillies, drained
  • 2 GF rice flour soft tortillas
  • 2 cups shredded cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. Heat the oil over medium heat in a skillet. Add onions and cook for 3 minutes.
  3. Add ground beef, brown and drain fat.
  4. Cover with taco seasoning and water. Stir and simmer for 5 minutes.
  5. In a large bowl combine the corn, beans, tomatoes and chillies.
  6. ASSEMBLE CASSEROLE: tortilla, corn mixture, seasoned meat, 1 cup cheese and repeat
  7. Bake for 30 minutes. Allow to cool for 10 minutes so the casserole will set up.

Hubby and I may have enjoyed more than one serving of this casserole.  It was super good, guys!  We have leftovers all set for lunch tomorrow and I can’t wait.

If you want to know what products I used here you go:

Taco Seasoning – McCormick, I buy it at Wal-Mart

Gluten Free Tortillias – Toufayan Bakeries or Aldi’s “LiveGFree” *Insider tip – both are made by Toufayan and they are cheaper at Aldi* These are my go-to GF wrap.  They BEND guys!

With this Gluten Free Enchilada Casserole there are endless possibilities.  You could add some green peppers, jalapenos, olives, and top with sour cream or avocado.

    I used to buy these wraps at my local market and they stopped carrying them. Wah!! 🙁
    They are delicious with perfect texture.

    Sounds easy and looks great! Thanks for sharing what products you used and where to buy. I really like Aldi GF products and have used many a Toufayan wrap as well.
