Gluten Free Menu Plan April 20 2015

Fingers crossed that April showers bring May flowers!   We have been getting a ton of rain, not in quantity but in frequency.  Luckily the beginning part of Saturday was pretty so we got to enjoy some time outside.  We were super productive and checked things off our To-Do around the house list while it rained.  You know how you fix things around the house that you know no one will ever notice but you?  That was us.

The other fun that came Saturday was a Gluten Free fried food coma.  We do not fry food very often for obvious reasons, but as a Celiac sometimes you just NEED a Gluten Free onion ring.  And since the fryer is out and the oil is hot you might as well make corn dogs, donut holes and fried GF oreos.

Gluten Free Onion Rings Recipe

Fried GF Oreos – make a GF pancake batter with the Aldi LiveGFree baking mix, dip the Trader Joes Gluten Free Joe-Joes in the batter and fry.  You can thank me later for that one 🙂

Gluten Free Foster Farms Corn Dogs – these were on sale at our local grocery store

Gluten Free Food Allergy Fest is THIS WEEKEND in Columbus , OH  April 25 & 26 10am-4pm!  Columbus has never had a Gluten Free large event so if you are in the area it is worth the drive.  I will be there to do a cooking demo with Cindy from Vegetarian Mamma, selling my books and the “Gluten Is Not My Friend” t-shirts.

 

My trip to check out a new Gluten Free product line will be in early May.  Can’t wait to tell you all about it soon!

 

My 6th book, The Celiac Cookbook and Survival Guide, is almost ready for you guys!  It will be out sometime in May!  It will have pictures!!!

ImaCeliac Weekly Menu

I’m roasting a chicken on Monday night so I can use the leftover chicken in at least one other meal this week.  Love cooking once for multiple meals!

Monday: Roasted Chicken and veggies

Tuesday:  Easy Peasy Spaghetti with GF garlic bread

Wednesday: Baked Chicken Fajitas

Thursday: Chicken Skillet Dinner

Friday: Hubby in Charge – Chicken Fried Rice 

Saturday: Hubby in Charge – leftovers
