Bacon Basil Tomato Soup

Now that Fall is here it is time to enjoy soups, stews and chili’s. During my last trip to the grocery store I tried to find a Gluten Free can tomato soup but sadly ALL of them had wheat flour in them. So I decided I would make my own Gluten Free tomato soup. Easy Homemade Bacon Basil Tomato Soup, the perfect soup for a cool day

Confession time, as a child there was nothing anyone could do to convince me to eat tomato soup. I remember my parents trying multiple times and I just wasn’t having it. Now as an adult, tomato soup is flavorful and comforting.

However, I didn’t want to make regular tomato soup, I wanted to add my own spin to it to make it fun. When I saw some bacon in the fridge I new I could create something tasty. Because honestly there aren’t many recipes that bacon can’t make better!

Enjoy this homemade tomato soup with a bacon grilled cheese sandwich

Bacon Basil Tomato Soup

Ingredients

  • 6 slices of bacon
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 14oz jars of diced tomatoes
  • 1 8oz jar of tomato sauce
  • Salt and pepper
  • Fresh Bail, chopped - about half a handful
  • 2 cups GF chicken broth
  • 1/2 tsp sugar
  • 2 tbsp bacon grease from cooking the bacon

Instructions

  1. Heat a skillet over medium low heat. Fry your bacon, place on a paper towel and reserve at least 2 tbsp of the grease
  2. In a large pot heat the olive oil over medium heat
  3. Add in the onions and cook for 3-5 minutes
  4. Add in the can tomatoes, seasoning, herbs, chicken broth, sugar and bacon grease.
  5. Cook on low for 5 minutes
  6. Pour the mixture into a high powered blender and puree - I use a Blendtec
  7. Pour soup back into the large pot and simmer for 15 minutes.
  8. Serve with chopped bacon on top

This soup was awesome! The salty flavor of the bacon along with the fresh herbs and tomatoes really took this soup to the next level.

We enjoyed ours with grilled cheese sandwiches, mine of course had some bacon in it.

The leftovers I put in a quart mason jar and placed in the fridge. It will make a tasty lunch this week. You could also put the leftover soup in a gallon size plastic bag and freeze for later.

If you are not able to get fresh basil, dried will also work.
