Hey friends! How was your weekend? Ready for another fun filled Gluten Free week?
The snow/ice/sleet from winter storm Jonas that hit the east coast nailed us pretty good. We have a mess and it will take days to dig out. You see, down in the South ice/snow cause a total shut down of EVERYTHING. We have been trapped in the house for over 3 days and kids will be out of school for at least 2 days this week. It is important to note we got less than 8 inches and life is still at a stand still.
As you can imagine that has limited my ability to grocery shop. I have a plan for the week and hope to hit the store Monday afternoon once things start melting.
This is also a big week as my mom is getting married. We lost my dad over 5 years ago to cancer and she has found a new someone to spend her days with. They will get married this weekend at a small ceremony surrounded by family and friends. All the kids, son-in-laws, and grandkids are in the wedding so it will just be a big party. They are even going to have Gluten Free cupcakes for the twins and I at the reception!
Gluten Free Weekly Menu
Monday: Rotisserie Chicken from the grocery store with roasted veggies
Tuesday: Scalloped Potatoes and Hamburger I will add some extra veggies
Wednesday: Enchilada Casserole – I will use the leftover chicken from Monday instead of ground beef
Thursday: Slow Cooker BBQ Pork Chops
Friday: Rehearsal dinner at Five Guys – Junior Cheeseburger no -bun, mark as allergy so they change gloves and a pile of fries will be my order!
Saturday: Wedding Reception
