Chicken Cordon Bleu

This super simple Gluten Free recipe is perfect for a mid-week dinner or for weekend dinner guests. Chicken Cordon Bleu is thin chicken breast rolled up with ham and cheese then breaded. As a Gluten Free eater you obviously need to make some adjustments but you still end up with a tasty dish.

Simple Gluten Free recipe for Chicken Cordon Bleu

Gluten Free bread crumbs are a tricky thing to navigate. Some Gluten Free bread crumbs are just tasteless and hard as rocks, others get soggy and fall off.

Here are some brands that we enjoy:

Aleias

4C Crumbs

You can make your own bread crumbs with crushed cereal or toasted GF bread that you run through a food processor with some seasoning. I had some Aleia’s in the fridge that I used for this dish.

Ingredients

  • 3 tbsp olive oil
  • 1 egg
  • 2 cups GF bread crumbs
  • Salt and pepper
  • 3-4 thin sliced chicken breasts
  • 3-4 slices of GF ham, sandwich meat is fine
  • 3-4 slices of cheese: swiss, colby jack, or sharp cheddar

Instructions

  1. Heat oven to 400 degrees
  2. Heat a large, oven safe skillet over medium high heat and add in olive oil.
  3. Setup is important so make sure you have everything ready to go before you start breading the chicken.
  4. In 1 small bowl place an egg with salt and pepper, stir
  5. In another small bowl put the bread crumbs
  6. On a cutting board have the ham and cheese slices ready.
  7. Grab a few toothpicks to help hold everything together.
  8. Take the chicken through the egg bowl then the bread crumbs, covering both sides.
  9. Lay flat and place ham and cheese on the chicken.
  10. Roll the chicken so the ham and cheese are on the inside. Secure with toothpicks.
  11. Repeat for all chicken pieces.
  12. Place rolled up chicken in the hot oil and cook on each side for 2 minutes to brown.
  13. Place skillet in the oven and cook for 20 minutes.
  14. Serve and enjoy!

Wow family and friends with this easy Gluten Free recipe for Chicken Cordon Bleu

It looks complicated but it really isn’t. From start to finish it was 35 minutes and that includes steaming the broccoli, cooking green beans for the kids, cleaning the kitchen and playing referee while kiddos ran around the house.

I was not planning on making this for dinner this week but I saw a Tasty video on Facebook that made me miss Chicken Cordon Bleu so I used what I had in the fridge to make it happen.  I used colby jack cheese because that is what I had, but traditionally this dish uses swiss.

The chicken came out with a light crunch and was very moist. I was impressed that it only took 20 minutes to cook through.

If you don’t want to put them in the oven on a skillet you could grease a casserole dish and line the chicken up in that to bake.

Enjoy Chicken Cordon Bleu again with this great Gluten Free recipe!
