Hey all! How was your weekend? Our weekend was filled with family adventures and food. The Gluten Free food highlights included: s’mores, lettuce wraps, waffles, Jason’s Deli, and fried chicken.
We had a campout at a friend’s farm that included swimming in the pond, fishing, canoeing and a campfire. We made GF hot dogs and s’mores. We used the Schar Honeygrams. They taste very good and hold up better than other brands of GF graham crackers. We enjoyed GF lettuce wraps and fried rice from Red Bowl (a local Asian place similar to PF Changs) then had Jason’s Deli for a salad and sandwich for dinner. I made GF waffles both Saturday and Sunday. I use the Aldi LiveGFree brand which is actually just the GF Bisquick. Then Sunday topped the weekend off with my mother-in-law making GF fried chicken for lunch. Sooooo good! Hubby even said he couldn’t tell they were GF. This is week 11 of 12 for our Lean Body Challenge! Almost done! I have prepped some breakfasts and lunches for us this week to get us started on the right foot!
Gluten Free Lean Body Dinner Menu
Monday: Ground Turkey meat sauce spaghetti – GF pasta for kids, zoodles for adults
Tuesday: Grilled pork chops with grilled veggies – going to adapt this recipe
Wednesday: Leftover Stir Fry – will use leftover grilled pork
Thursday: Fajita Cauliflower Rice Bowl
Friday: Pizza night! We will use the LiveGfree brand mix
Saturday: Dinner out to celebrate Hubby!
