Let’s start 2021 off on the right foot with a Gluten Free meal plan for our busy week.
This week marks the 10th anniversary of my Celiac Disease diagnosis. I will write another post about my journey that you can read here.
Since 2020 was crazy for all of us, I thought I should try to be intentional with our meal planning for 2021.
Our family life is different these days due to covid, but it doesn’t stop the fact that I have to prepare gluten free dinners every night.
Gluten Free Meal Plan
MONDAY – Chicken Hibachi with fried rice
TUESDAY – Taco & Fajita night
WEDNESDAY – Lasagna
THURSDAY – Chicken and mushrooms in the instant pot
FRIDAY – Pizza night!
SATURDAY – Grilled steak and veggies
Meal Prep Tips
To save time I will use Instacart (affiliate link) to delivery my groceries to our house and I will do some meal prep Sunday night.

Breakfast for the week will be egg frittata muffins.
I will also make my Kale Bean soup to use for lunches for the week.
