Gluten Free Meal Plan January 11, 2021

The mountains are calling and I have a meal plan for it!

It has been 8-10 years since I have seen my best friends from high school. We meet in the 10th grade at church and even though we went to different high schools, we were together all the time. There were 3 of us girls and 2 boys that spent time together in the evenings and weekends. We called ourselves “The Crew”. Now, almost 25 years later we have spouses/ partners and 12 kids between us.

This week I’m heading to the NC mountains to spend a few days with one of them. She is one of those friends that no matter how long it has been, we can still pick up where we left off.

Even though I’m going to be traveling, I still have a meal plan. And I’ve done a ton of meal prep for it.

WHY HAVE A MEAL PLAN WHEN YOU TRAVEL?

  • Eating out gluten free can be a challenge when you travel
  • Eating out can get pricy when you travel
  • Cooking in a kitchen other than your own is a risk
  • Cooking when you are on vacation is still work
  • Getting stuck in an unfamiliar place when you are hungry is stressful
  • Being sick when you aren’t at home is awful

HERE IS OUR GLUTEN FREE MEAL PLAN FOR THE WEEK

MONDAY ON VACATION – Baked ziti (I made double last week)

TUESDAY ON VACATION – Pizza – there is a safe pizza place that I’ve eaten at before

WEDNESDAY ON VACATION – Taco Salads (I have frozen taco meat I’m taking)

THURSDAY HOME – Meatloaf and mashed potatoes

FRIDAY HOME – One Dish Wonder (this one never gets old!)

SATURDAY HOME – Brinner – pancakes, eggs and bacon

I also made egg frittata muffins that I’m taking for breakfast.


Now, before you judge me for leaving my hubby in charge of cooking dinner while I’m gone. Aside from the fact that hubby is fully capable of making dinner for all of us, they like when mom leaves. That means they can go to all the restaurants I can’t and eat gluten! They actually call is “Gluten-palooza”. They each pick a restaurant in town that I can’t go to and eat all the gluten while I’m gone!

So here’s to a couple days in the snowy mountains with my friend and my family getting their gluten fix!
