Hello dear Gluten Free friends! I have missed you. I could make a bunch of excuses but it all boils down to… life.
Kids have now started school so I need to get back into menu planning and meal prepping. I have been laid back for too long. So here is what we are eating this week.
Gluten Free Dinner Menu Plan
MONDAY – Chicken Chili slow cooker
TUESDAY – Chicken Ramon Noodles (Aldi brand GF noodles)
WEDNESDAY – Chicken Alfredo and steamed broccoli
THURSDAY – Meatloaf
FRIDAY – Dinner out
SATURDAY – Leftovers
I also did a TON of meal prep for the week! I have 4 days worth of breakfasts AND lunches for Hubby and I. This took 2 hours of my Sunday to include grocery shopping. If I take the time to do the work on Sunday, it really makes a huge difference for my week.
Here is what I Meal Prepped:
- Beef and Broccoli and rice
- Pork chops and Roasted Veggies
- Egg Frittata Muffins
For the egg frittata I made them without a crust and included: ham, green peppers, spinach, swiss cheese, and heavy cream. Pop these in the microwave for 20-30 seconds and breakfast is ready!
If you are new to menu planning here are a few tips for you:
- Make a menu plan
- Create your grocery list based on the plan
- Buy the groceries
- Prep whatever you can
- Post the menu plan where you can see it
The final tip of posting the menu is key for me. It helps me remember if I need to thaw something or start something before I go to work. The slow cooker is my BFF on days where I work late! Walking in the door after 5:30pm and having to make food happen is too stressful for me. Monday this week is a long day so the slow cooker is saving me!
