Appetizer Dinner and Cheesy Zucchini Cakes

Most nights dinners are well rounded with grains, veggies, meats, fruit, starch and sugars.  However, one in a while I go crazy and just make a bunch of appetizers for dinner.  It is so much fun, the kiddos love it and the leftovers are perfect for school lunches!  It’s a win all around.

This past weekend we had appetizers for dinner.  Besides the fact that I used a ton of dishes it was a total success!  Our dinner included Bacon Cheeseburger Puffs, Corn Dog Muffins and Cheesy Zucchini Cakes.  The only new recipe was the zucchini cakes and I have to say they rocked.

Hubby and I devoured the zucchini cakes!  To be honest, when you pan fry any vegetable with cheese it just becomes awesome.  As a side note I’m horrible at pan frying food so if I can make this dish you will rock it!  Promise!

Cheesy Zucchini Cakes

Cheesy Zucchini Cakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 6-8 zucchini cakes

Ingredients

  • 1 large zucchini, grated
  • 1 tbsp red onion
  • 1 cup GF cereal bread crumbs
  • 1 egg
  • 1 tbsp GF dry ranch dressing mix
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp vegetable or coconut oil

Instructions

  1. Grate the zucchini and remove excess liquid with paper towels. It will take a few towels.
  2. Heat a large skillet over medium high heat and add in the oil.
  3. In a bowl combine the grated zucchini, onions, bread crumbs, egg, dressing and cheese.
  4. When the oil starts making "waves" it is ready.
  5. Place a spoonful of the zucchini mixture in the hot oil.
  6. Cook on each side for 2-3 minutes.
  7. Place on a plate covered with a paper towel to drain excess oil
  8. Enjoy!

To be honest hubby and I ate all of the zucchini cakes so there are no leftovers.  The kids will just have to enjoy the corn dog muffins and bacon cheeseburger puffs for lunch.  Both of which heat up well in less than 30 seconds.  You can also enjoy them with ketchup, ranch or BBQ sauce if you are a dipper.
