Welcome to 2016! Did you stay up for the ball drop? We were all crashed by 10:30pm, we are old.
We had a good weekend with family. We had Christmas with my side of the family. Instead of making a big traditional Christmas meal I made slow cooker chili and Mac n Cheese. Always a crowd favorite. The kiddos got loaded down with more toys and had a blast with cousins.
This week normal returns with the kids back in school, dance class and a regular work schedule. My menu plan this week is easy and relies on the slow cooker to save time and stress.
Gluten Free Weekly Menu
Monday: Grilled Cheese Sandwich – we will add bacon!
Tuesday: Chicken Spaghetti
Wednesday: Slow Cooker BBQ Pork – I will make a double portion since I’m using the meat for 3 dinners
Thursday: BBQ Pork Quesadillas – using pork from Wednesday
Friday: Cheesy Tomato Basil Pasta Bake – an eMeals recipe, using pork from Wednesday
Saturday: Grilled hot dogs and chicken
