Gluten Free Weekly Menu April 4 2016

Welcome to April! We have a new month full of new adventures and new Gluten Free meals.  Take a few minutes to do some menu planning and figure out what you are going to cook this week so you can reduce your stress as you do life this week.

We had a fun mini-vacation to Charlotte, NC over the weekend. The kids think staying in a hotel is the most fun thing ever, especially if the hotel has a pool. We shopped, we ate, we played, we swam and we went to the Gluten Free Wellness Event on Saturday. This was the kids first Gluten Free event and it was wonderful to see them running around eating all the Gluten Free treats. There is just something special about telling your Gluten Free kid they can eat ANYTHING they see. So often the answer is “No, you can have that, it isn’t safe.” We came home with tons of samples and snacks for days for the twins.

This week Hubby and I are starting a new training/health program. I’ll share more about it tomorrow, but the overview is that it is a 12 week lean body challenge where you eat 5 times a day, have protein shakes and work out daily. This means even more menu planning. So the next few weeks our menu planning will not only be Gluten Free but targeted toward a lean diet. Weekly Menu TM

Gluten Free Lean Body Dinner Menu

Monday:  Roast chicken, roasted veggies, and brown rice

Tuesday:  Tacos with ground turkey, salad, veggies and corn tortillas 

Wednesday:  Baked turkey breast, salad, and quinoa

Thursday:  Shredded Chicken and Veggies – slow cooker

Friday: Meatloaf with ground turkey, roasted potatoes and green beans

Saturday: Chicken Primavera – brown rice pasta, tons of veggies, olive oil, herbs
